Akawi cheese is a fresh, semi-soft cheese and requires refrigeration even when unopened. Do not store at room temperature.

Refrigerator

Store opened Akawi cheese tightly wrapped in plastic wrap or aluminum foil, or in an airtight container. If stored in brine, ensure it is submerged in fresh, clean brine and kept refrigerated.

Freezer

6 months

While safe to freeze for up to 6 months, the texture of Akawi cheese may become crumbly or mealy upon thawing. Wrap tightly in plastic wrap, then in aluminum foil or a freezer bag to prevent freezer burn.

Signs of Spoilage

  • Visible mold (other than intentional mold on certain cheeses)
  • Sour, ammonia-like, or off-odor
  • Slimy or sticky texture
  • Significant discoloration

Room Temperature Safety

Perishable foods, including Akawi cheese, should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), the limit is 1 hour.

The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C). Food should not remain in this temperature range for extended periods.
