Pantry

Up to 'best by' date (unopened); 1-2 weeks (opened for quality)

Store in a cool, dry place, away from direct sunlight. Once opened, keep in an airtight container to maintain freshness and prevent moisture absorption.

Refrigerator

Not recommended for quality

Refrigeration is not typically necessary and can cause picos to become stale more quickly. If storing with perishable toppings, refrigerate the combined item.

Freezer

2-3 months for best quality; safe indefinitely

To freeze, wrap picos tightly in freezer-safe bags or aluminum foil to prevent freezer burn and moisture absorption. Thaw at room temperature.

Signs of Spoilage

  • Visible mold growth
  • Off-odor (musty or sour)
  • Significant change in texture (e.g., becoming soft or soggy due to moisture absorption)
  • Stale or rancid taste (quality issue, but indicates degradation)

Room Temperature Safety

The 2-hour rule (1 hour above 90°F/32°C) applies if picos become moist or are topped with perishable ingredients. Dry picos are shelf-stable.

40°F–140°F (4°C–60°C). While dry picos are shelf-stable, this zone is critical for any perishable toppings or if they become wet.

Keep dry picos in a cool, dry place. If they become wet or are served with perishable dips/spreads, treat them as perishable food and refrigerate within 2 hours (1 hour if above 90°F/32°C).

Expert Tips

Safe Handling

1

Always store in a dry environment to prevent mold growth.

2

Keep away from strong odors, as picos can absorb them.

3

If serving with dips or spreads, ensure proper temperature control for the perishable accompaniments.
