Pantry
Several weeks to 2-3 months (whole, uncut)
Store whole, uncut ash gourd in a cool, dry, well-ventilated area (50-60°F / 10-15°C) away from direct sunlight. Do not wash until ready to use.
Refrigerator
3-5 days (cut pieces); Not recommended for whole, uncut
Once cut, wrap ash gourd tightly in plastic wrap or place in an airtight container. Store in the refrigerator. Whole, uncut ash gourd is best stored at cool room temperature to prevent chilling injury.
Freezer
8-12 months (blanched)
To freeze, peel, deseed, and cut the ash gourd into desired pieces. Blanch in boiling water for 2-3 minutes, then cool quickly in ice water. Drain thoroughly, pack into airtight freezer bags or containers, removing as much air as possible.
Signs of Spoilage
- Soft spots or mushy texture
- Mold growth on the surface
- Foul or off-odor
- Significant discoloration
Room Temperature Safety
