Micro herbs are highly perishable. For best quality and safety, refrigerate immediately. If left at room temperature, consume within 2 hours.

Refrigerator

3-7 days

Store unwashed micro herbs loosely wrapped in a slightly damp paper towel, placed in a plastic bag or an airtight container in the crisper drawer. Wash gently just before use.

Freezer

10-12 months

While freezing is safe, it may alter the delicate texture of micro herbs, making them more suitable for cooked applications. Wash and thoroughly dry. Chop finely and freeze in ice cube trays with a small amount of water or oil, or spread on a baking sheet and then transfer to freezer bags once frozen solid.

Signs of Spoilage

  • Wilting or limp leaves
  • Slimy or mushy texture
  • Discoloration (yellowing, browning, or black spots)
  • Off-odor or sour smell
  • Visible mold growth

Room Temperature Safety

2-hour rule (1 hour if ambient temperature is above 90°F/32°C)

40°F–140°F (4°C–60°C)

Do not leave micro herbs at room temperature for more than 2 hours. If the temperature is above 90°F (32°C), do not leave out for more than 1 hour, as bacteria can multiply rapidly in the danger zone.
