Room Temperature Safety

The 2-hour rule (1 hour above 90°F/32°C) primarily applies to perishable foods to limit bacterial growth. While oil is shelf-stable, prolonged exposure to high temperatures can accelerate rancidity and degrade quality.

The danger zone (40°F–140°F) is for perishable foods where bacteria multiply rapidly. For oils, this temperature range is not a concern for bacterial safety, but higher temperatures within or above this range will accelerate rancidity.

Store oil in a cool, dark place, ideally below 70°F (21°C), to maintain quality and prevent rancidity. Avoid direct sunlight and heat sources.
