Avocado paste is highly perishable and should not be stored at room temperature. Refrigerate immediately after preparation or opening.

Refrigerator

1-2 days

Store in an airtight container. To minimize browning, press plastic wrap directly onto the surface of the paste before sealing the container. A thin layer of water or lime juice on top can also help.

Freezer

3-4 months

Freeze in an airtight container or freezer-safe bag. Adding a small amount of lime or lemon juice can help prevent browning. Thaw in the refrigerator.

Signs of Spoilage

  • Significant darkening or blackening beyond normal oxidation
  • Sour or off odor
  • Visible mold growth
  • Slimy or sticky texture

Room Temperature Safety

2-hour rule (1 hour above 90°F/32°C)

40°F–140°F

Perishable foods, including avocado paste, should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), the limit is 1 hour. Discard any avocado paste left out longer than these times.
