Raw beets are best stored in the refrigerator to maintain freshness and prevent spoilage. A typical pantry environment is not suitable for long-term storage of fresh root vegetables.
Refrigerator
2-4 weeks
Remove the greens, leaving about an inch of stem attached to prevent bleeding and moisture loss. Do not wash the beets before storing. Place them in a plastic bag or airtight container in the crisper drawer of the refrigerator.
Freezer
8-12 months
Wash, peel, and cook beets until tender. Cool them quickly, then slice, dice, or leave whole. Pack into freezer bags or airtight containers, removing as much air as possible. Label with the date.

- Soft or mushy texture
- Slimy surface
- Off-odor
- Mold growth
- Significant discoloration
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C). Cooked beets should not remain in this temperature range for extended periods.
For raw beets, prompt refrigeration is recommended to maintain freshness and prevent spoilage. Cooked beets should be refrigerated within 2 hours of cooking to prevent the growth of harmful bacteria.
Safe Handling
Wash beets thoroughly under running water before peeling or cooking.
Avoid cross-contamination by using separate cutting boards and utensils for raw produce and raw meats.
Cook beets to desired tenderness; there is no specific internal temperature for safety as they are a vegetable, but ensure they are heated thoroughly if served hot.
