Raw beets are best stored in the refrigerator to maintain freshness and prevent spoilage. A typical pantry environment is not suitable for long-term storage of fresh root vegetables.

Refrigerator

2-4 weeks

Remove the greens, leaving about an inch of stem attached to prevent bleeding and moisture loss. Do not wash the beets before storing. Place them in a plastic bag or airtight container in the crisper drawer of the refrigerator.

Freezer

8-12 months

Wash, peel, and cook beets until tender. Cool them quickly, then slice, dice, or leave whole. Pack into freezer bags or airtight containers, removing as much air as possible. Label with the date.

Room Temperature Safety

The 2-hour rule applies to cooked beets: Do not leave perishable food out at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), the limit is 1 hour. Raw beets are less perishable but should still be refrigerated for optimal quality and safety.

The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C). Cooked beets should not remain in this temperature range for extended periods.

For raw beets, prompt refrigeration is recommended to maintain freshness and prevent spoilage. Cooked beets should be refrigerated within 2 hours of cooking to prevent the growth of harmful bacteria.
