Store in a cool, dark, well-ventilated area for a very short period if refrigeration is not immediately available. Best quality and safety are maintained in the refrigerator.
Refrigerator
3-4 weeks
Store unwashed baby carrots in a plastic bag or container in the crisper drawer of the refrigerator. Do not store with fruits that produce ethylene gas (like apples or pears) as this can cause bitterness.
Freezer
8-12 months
For best quality, blanch baby carrots before freezing. Wash, peel if desired, and cut to desired size. Boil for 2 minutes, then immediately cool in ice water. Drain thoroughly, pack into airtight freezer bags or containers, and freeze.
Signs of Spoilage
- Slimy or mushy texture
- White blush or discoloration (often due to dehydration, but can indicate spoilage if accompanied by other signs)
- Off-odor
- Mold growth
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Baby carrots, like other fresh produce, should be refrigerated promptly after purchase and preparation to maintain safety and quality. Discard any carrots left in the danger zone for too long.
