Okra is highly perishable and should not be stored at room temperature for extended periods. Store in the refrigerator immediately.

Refrigerator

3-4 days

Store unwashed okra in a paper bag or loosely wrapped in plastic in the crisper drawer of the refrigerator. Wash just before use.

Freezer

8-12 months

For best quality, blanch okra before freezing. Wash, trim, and cut into desired pieces. Blanch in boiling water for 3-5 minutes, then cool quickly in ice water. Drain thoroughly, pat dry, and pack into freezer-safe bags or containers.

Signs of Spoilage

  • Slimy or sticky texture
  • Soft spots or mushiness
  • Black or dark spots
  • Mold growth
  • Off-odor

Room Temperature Safety

Perishable foods should not be left out at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), food should not be left out for more than 1 hour.

The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).

To prevent bacterial growth, refrigerate or freeze okra promptly. Do not leave fresh okra on the counter for extended periods.
