Fresh chili peppers are best stored in the refrigerator for optimal freshness and safety. If absolutely necessary for very short-term use (1-2 days), store in a cool, dry, dark place away from direct sunlight, but expect rapid quality degradation.
Refrigerator
1-2 weeks
Store unwashed in a plastic bag or paper towel in the crisper drawer of the refrigerator. Do not wash until ready to use to prevent premature spoilage.
Freezer
8-12 months
Wash, dry thoroughly, stem, and seed peppers. They can be frozen whole, sliced, or chopped. Blanching is not necessary. Pack in airtight freezer bags or containers, removing as much air as possible, for best quality.
Signs of Spoilage
- Soft spots or mushy texture
- Mold growth (fuzzy white, green, or black spots)
- Discoloration (darkening or unusual spots)
- Slimy film
- Off-odor
Room Temperature Safety
40°F–140°F
Perishable foods, including fresh produce, should not be left at room temperature (between 40°F and 140°F) for more than 2 hours. If the ambient temperature is above 90°F (32°C), food should not be left out for more than 1 hour.
Safe Handling
Wash hands thoroughly with soap and water after handling chili peppers, especially before touching eyes or face, as capsaicin can cause irritation.
Consider wearing gloves when handling and cutting chili peppers if you have sensitive skin.
Wash chili peppers under running water before use.
Prevent cross-contamination by using separate cutting boards and utensils for produce and raw meats.
