Unsafe

Fresh bean curd must be kept refrigerated at all times. Do not store at room temperature.

Refrigerator

3-5 days

Store opened bean curd in an airtight container, submerged in fresh water. Change water daily. For unopened packages, store in original packaging until the 'use-by' date.

Freezer

3-5 months

Drain and press bean curd before freezing. Cut into desired portions. Freeze in an airtight container or freezer bag. Note that freezing changes the texture, making it chewier and more porous.

Signs of Spoilage

  • Sour or off odor
  • Slimy or sticky texture
  • Discoloration (e.g., pink, green, or black spots)
  • Mold growth
  • Bulging or leaking packaging (for unopened packages)

Room Temperature Safety

2-hour rule (1 hour above 90°F/32°C)

40°F–140°F (4°C–60°C)

Perishable foods, including bean curd, should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), this time limit is reduced to 1 hour. Discard any bean curd left in the danger zone for too long.

Expert Tips

Safe Handling

1

Always wash hands before and after handling bean curd.

2

Prevent cross-contamination by using separate cutting boards and utensils for bean curd and other foods, especially raw meat, poultry, or seafood.

3

Ensure bean curd is kept refrigerated below 40°F (4°C).

4

While bean curd does not have a minimum safe cooking temperature like meat, ensure it is heated thoroughly for recipes.
