For very short-term storage (1-2 days), store unwashed beets with greens removed in a cool, dark, dry place. Refrigeration is preferred for safety and quality.

Refrigerator

2-4 weeks

Remove greens, leaving about an inch of stem. Do not wash until ready to use. Store unwashed beets in a plastic bag in the crisper drawer of the refrigerator.

Freezer

10-12 months

Wash and peel beets. Cook until tender (boil or steam). Cool quickly, then freeze whole, sliced, or diced in airtight containers or heavy-duty freezer bags.

  • Slimy texture
  • Off-odor
  • Discoloration

Room Temperature Safety

Follow the 2-hour rule: Do not leave perishable food out at room temperature for more than 2 hours.

The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).

Refrigerate promptly. If left out for more than 2 hours (or 1 hour if the temperature is above 90°F/32°C), discard.
