For optimal quality and safety, fresh beets should be refrigerated. A typical warm pantry is not suitable for long-term storage of fresh beets.
Refrigerator
2 to 4 weeks
Remove greens (if attached) to prevent moisture loss. Do not wash beets before storing. Place unwashed beets in a plastic bag in the crisper drawer.
Freezer
8 to 12 months
Wash, peel, and cook beets until tender. Cool quickly, then slice or dice. Pack into freezer-safe containers or bags, leaving headspace. Label with date.

- Soft or mushy texture
- Slimy surface
- Mold growth
- Off-odor
- Significant discoloration
Room Temperature Safety
The 'Danger Zone' is the temperature range between 40°F (4.4°C) and 140°F (60°C) where bacteria can multiply rapidly.
Fresh beets should be refrigerated promptly after purchase and preparation to maintain quality and safety. Avoid leaving them at room temperature for extended periods.
Safe Handling
Wash hands thoroughly with soap and water before and after handling fresh produce.
Wash beets under running water just before preparing or eating. Do not use soap or detergent.
Use a clean cutting board and utensils to prevent cross-contamination.
Cook beets to desired tenderness. While often eaten cooked, ensure proper hygiene during preparation.
