Not recommended for extended storage

Whole, unwashed bell peppers can be stored in a cool, dark place for a few days, but refrigeration is recommended for optimal quality and shelf life.

Refrigerator

1-2 weeks (whole), 3-4 days (cut)

Store whole, unwashed bell peppers in a plastic bag or the crisper drawer. Store cut bell peppers in an airtight container.

Freezer

10-12 months

Wash, core, and slice or dice bell peppers. Blanching is not required. Freeze in a single layer on a baking sheet, then transfer to freezer bags or airtight containers.

Signs of Spoilage

  • Soft spots or wrinkles on the skin
  • Mold growth
  • Slimy texture
  • Off-odor
  • Discoloration

Room Temperature Safety

The 2-hour rule applies: Do not leave perishable food out at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), the limit is 1 hour.

The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).

Bell peppers are best stored in the refrigerator. If left at room temperature, consume or refrigerate within 2 hours to prevent bacterial growth, especially if cut.
