Cooked birria should not be stored at room temperature for extended periods. Refrigerate promptly.
Refrigerator
3-4 days
Store cooked birria in shallow, airtight containers to facilitate rapid cooling. Ensure refrigerator temperature is maintained at or below 40°F (4°C).
Freezer
2-6 months
For best quality, freeze cooked birria in freezer-safe, airtight containers or heavy-duty freezer bags. Thaw in the refrigerator, never at room temperature.
Signs of Spoilage
- Sour or off odors
- Slimy or sticky texture
- Mold growth
- Unusual discoloration
Room Temperature Safety
40°F–140°F (4°C–60°C)
Promptly refrigerate or freeze birria after cooking. Divide large quantities into shallow containers to cool quickly before refrigerating to minimize time in the danger zone.
Safe Handling
Reheat birria to an internal temperature of 165°F (74°C).
Do not leave cooked birria at room temperature for more than 2 hours (1 hour if the temperature is above 90°F / 32°C).
Prevent cross-contamination by washing hands, utensils, and cutting boards after handling raw ingredients and before handling cooked birria.
