Bitter melon is best stored in the refrigerator to maintain freshness. If kept at room temperature, use within 1-2 days.
Refrigerator
3-5 days
Store unwashed bitter melon in a plastic bag or wrapped in a paper towel inside a plastic bag in the crisper drawer of the refrigerator. Do not wash until ready to use.
Freezer
10-12 months
To freeze, wash and slice bitter melon. Blanch in boiling water for 2-3 minutes, then cool quickly in ice water. Drain thoroughly, pat dry, and pack into airtight freezer bags or containers.
Signs of Spoilage
- Soft spots or mushy texture
- Mold growth (fuzzy white, green, or black spots)
- Significant discoloration or darkening
- Unpleasant or sour odor
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Bitter melon, like most fresh produce, should be refrigerated promptly after purchase to maintain quality and safety. Avoid leaving it out at room temperature for extended periods.
