Blue CheeseShelf Life, Storage, and Spoilage Guide
Pantry
Not RecommendedUnsafe
Blue cheese is a perishable food and should not be stored at room temperature once opened. Unopened, it should still be refrigerated for safety and quality.
Refrigerator
1 week
Store opened blue cheese tightly wrapped in plastic wrap or foil, or in an airtight container, to prevent drying out and absorbing odors. Keep it in the coldest part of the refrigerator.
Freezer
Not recommended for quality
While safe indefinitely at 0°F (-18°C), freezing blue cheese is not recommended due to significant changes in texture, which can become crumbly and mealy upon thawing. If freezing, wrap tightly to prevent freezer burn.
Signs of Spoilage
- Presence of molds other than the intentional blue/green veins (e.g., pink, red, black, or fuzzy white mold on the surface).
- Strong, unpleasant ammonia-like or sour odor that is not typical for blue cheese.
- Slimy or sticky texture on the surface.
- Significant discoloration or drying out of the cheese.
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Always refrigerate blue cheese promptly after purchase and use. Discard any blue cheese that has been left in the danger zone for too long.
Safe Handling
Always wash hands before and after handling cheese.
Keep blue cheese refrigerated at 40°F (4°C) or below.
Avoid cross-contamination by using separate cutting boards and utensils for cheese and raw meats.
Discard any cheese left at room temperature for more than 2 hours (1 hour if above 90°F/32°C).
