Blue cheese is a perishable dairy product and requires constant refrigeration. Do not store at room temperature.
Refrigerator
3-4 weeks (opened)
Store tightly wrapped in plastic wrap or aluminum foil, or in an airtight container, to prevent drying out and odor transfer. Store in the coldest part of the refrigerator.
Freezer
6 months
While safe to freeze, the texture of blue cheese may become crumbly or mealy upon thawing. Wrap tightly in plastic wrap, then in aluminum foil, or place in a heavy-duty freezer bag. Best used in cooked dishes after thawing.
Signs of Spoilage
- Unusual sour or ammonia-like odor (beyond its natural pungent aroma)
- Development of mold that is not part of the cheese (e.g., fuzzy, discolored spots on the rind or cut surfaces that are not the characteristic blue/green veins)
- Slimy or excessively soft texture
- Significant discoloration not typical of blue cheese
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C). Blue cheese should not remain in this temperature range for extended periods.
Refrigerate blue cheese promptly after purchase and after each use. Discard any blue cheese left out at room temperature beyond the recommended time limits.
Safe Handling
Always wash hands with soap and water before and after handling cheese.
Avoid cross-contamination by using separate cutting boards and utensils for cheese and other foods, especially raw meats.
Do not leave blue cheese at room temperature for more than 2 hours (1 hour if the temperature is above 90°F/32°C).
