Room Temperature Safety
The 'Danger Zone' for food is between 40°F (4°C) and 140°F (60°C), where bacteria, including Bacillus cereus, can multiply rapidly.
Cooked rice should be cooled rapidly and refrigerated within 2 hours to prevent bacterial growth. Discard any cooked rice left in the danger zone for too long.
Safe Handling
Inspect dry rice for any signs of pests or damage before storage or use.
Cook rice thoroughly until tender. The USDA recommends cooking grains to 165°F (74°C) if combined with other ingredients, otherwise, ensure it is fully cooked.
Cool cooked rice rapidly within 2 hours after cooking. Divide large quantities into shallow containers to speed cooling.
Refrigerate cooked rice promptly in shallow, airtight containers.
Reheat cooked rice to an internal temperature of 165°F (74°C).
Avoid cross-contamination by using separate utensils and cutting boards for raw ingredients and cooked rice.
