Marinated fish must be refrigerated or frozen immediately. Do not store at room temperature.

Refrigerator

1-2 days

Store in the coldest part of the refrigerator, below 40°F (4°C). Keep in original packaging or tightly wrapped in plastic wrap or foil to prevent drips and cross-contamination.

Freezer

2-3 months for best quality; safe indefinitely at 0°F (-18°C)

For best quality, freeze boneless bangus within 1-2 days of purchase. Wrap tightly in freezer paper, heavy-duty aluminum foil, or place in heavy-duty freezer bags. Thaw slowly in the refrigerator, never at room temperature.

Signs of Spoilage

  • Sour, fishy, or ammonia-like odor
  • Dull, slimy, or milky appearance
  • Soft or mushy texture
  • Discoloration

Room Temperature Safety

2-hour rule (1 hour if ambient temperature is above 90°F / 32°C)

40°F–140°F (4°C–60°C)

Perishable foods, including raw marinated fish, should not be left at room temperature for more than 2 hours. If the temperature is above 90°F (32°C), discard after 1 hour.

Expert Tips

Safe Handling

1

Cook all fish to an internal temperature of 145°F (63°C) as measured with a food thermometer.

2

Prevent cross-contamination by keeping raw marinated fish separate from other foods, especially ready-to-eat items. Use separate cutting boards, utensils, and plates.

3

Wash hands thoroughly with soap and water before and after handling raw fish.

4

Thaw frozen marinated bangus in the refrigerator, under cold running water, or in the microwave. Cook immediately after thawing if using the cold water or microwave method.
