Room Temperature Safety
40°F–140°F (4°C–60°C)
Perishable foods, including opened gravy, should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), this time reduces to 1 hour. Discard any gravy left out longer than these times.
Safe Handling
Always reheat gravy to an internal temperature of 165°F (74°C).
Do not leave opened gravy at room temperature for more than 2 hours (1 hour if the temperature is above 90°F / 32°C).
Avoid cross-contamination by using clean utensils and containers.
Discard any gravy that has been left in the 'Danger Zone' (40°F–140°F / 4°C–60°C) for too long.
