Raw bratwurst should not be stored at room temperature due to rapid bacterial growth.
Refrigerator
1-2 days
Store raw bratwurst in its original packaging or in a sealed container on the lowest shelf of the refrigerator to prevent juices from dripping onto other foods. Keep at 40°F (4°C) or below.
Freezer
1-2 months
For best quality, freeze raw bratwurst in airtight packaging or heavy-duty freezer bags to prevent freezer burn. Thaw in the refrigerator, never at room temperature.
Signs of Spoilage
- Sour or off-odor
- Slimy or sticky texture
- Discoloration (e.g., grayish-brown or green spots)
- Mold growth
Room Temperature Safety
The 'Danger Zone' for food is between 40°F (4°C) and 140°F (60°C), where bacteria can multiply rapidly.
Refrigerate or freeze raw bratwurst promptly. Discard any raw bratwurst left in the danger zone for too long.
Safe Handling
Cook raw bratwurst to an internal temperature of 160°F (71°C) as measured with a food thermometer.
