Brie cheese should be refrigerated for optimal safety and quality, especially once opened. Unopened, follow manufacturer's 'best by' date and store in a cool, dry place if specified, but refrigeration is generally preferred.

Store opened brie cheese tightly wrapped in plastic wrap or aluminum foil, or in an airtight container, to prevent drying out and absorption of other odors. Keep in the coldest part of the refrigerator.
Freezer

Freezing soft cheeses like brie is not recommended by USDA as it can significantly alter the texture, making it crumbly or mealy upon thawing. While safe to eat, the quality will be compromised.
Signs of Spoilage
- Visible mold (other than the edible white rind, which is normal)
- Off-odor, such as a strong ammonia-like smell or sour smell
- Slimy or sticky texture
- Significant discoloration beyond its natural appearance
Room Temperature Safety
40°F–140°F
Do not leave brie cheese at room temperature (between 40°F and 140°F) for more than 2 hours. If the ambient temperature is above 90°F (32°C), do not leave it out for more than 1 hour.
Safe Handling
Always wash hands with soap and water before and after handling cheese.
Avoid cross-contamination by using separate cutting boards and utensils for cheese and other foods, especially raw meats.
Serve brie cheese at room temperature for best flavor, but adhere strictly to the 2-hour rule for perishable foods.
Discard any cheese that has been left in the 'danger zone' (40°F-140°F) for too long.
