Refrigerator

5-7 days

Tightly wrap to prevent drying out and absorption of odors. Refrigeration can extend shelf life but may alter texture.

Freezer

2-3 months

Wrap tightly in plastic wrap, then in aluminum foil or a freezer bag to prevent freezer burn. Thaw at room temperature or in the refrigerator.

Signs of Spoilage

  • Visible mold growth (fuzzy spots of various colors)
  • Off-odor (sour or yeasty smell)
  • Unusual discoloration
  • Hard or excessively dry texture

Room Temperature Safety

The 2-hour rule applies to perishable foods. While plain brioche is less prone to bacterial growth, it can mold. If brioche contains perishable fillings, it should not be left out for more than 2 hours (1 hour if above 90°F/32°C).

Plain brioche is generally safe at room temperature for a few days, but mold is the primary concern. For brioche with perishable fillings, refrigerate promptly.
