Refrigerate promptly after cooking. Perishable food should not be left at room temperature for more than 2 hours.
Refrigerator
3-4 days
Store in shallow, airtight containers to cool quickly and prevent bacterial growth. Place in the coldest part of the refrigerator.
Freezer
3-4 months
Wrap tightly in freezer-safe wrap or heavy-duty foil, then place in an airtight freezer bag or container. Label with the date.
Signs of Spoilage
- Sour or off odor
- Slimy or sticky texture
- Visible mold growth
- Unusual discoloration
Room Temperature Safety
40°F–140°F (4°C–60°C)
Perishable foods should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), food should not be left out for more than 1 hour, as bacteria multiply rapidly in the danger zone.
Safe Handling
Reheat all leftovers, including casseroles, to an internal temperature of 165°F (74°C) as measured with a food thermometer.
Divide large amounts of leftovers into shallow containers for quicker cooling in the refrigerator.
Do not leave cooked casserole at room temperature for more than 2 hours (1 hour if the temperature is above 90°F/32°C).
Prevent cross-contamination by using separate cutting boards and utensils for raw ingredients and cooked foods.
