Pasteurized buffalo milk must be refrigerated at all times. Unopened shelf-stable (UHT) buffalo milk can be stored in a cool, dark pantry for several months, but must be refrigerated immediately after opening.
Refrigerator
7 days
Keep buffalo milk refrigerated at 40°F (4°C) or below. Store in the coldest part of the refrigerator, not in the door, to maintain consistent temperature.
Freezer
3 months
Freeze buffalo milk in airtight containers, leaving about 1/2 inch of headspace as milk expands when frozen. Thaw frozen milk in the refrigerator; do not thaw at room temperature. Quality may be affected (separation) but it remains safe.
Signs of Spoilage
- Sour or off odor
- Lumpy, curdled, or thickened texture
- Discoloration (e.g., yellowish tint)
- Presence of mold
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C). Milk should not remain in this temperature range.
Always return buffalo milk to the refrigerator promptly after use. Discard any milk that has been left out at room temperature for longer than the recommended time limits.
Safe Handling
Always keep buffalo milk refrigerated at or below 40°F (4°C).
Do not leave buffalo milk at room temperature for more than 2 hours (1 hour if the temperature is above 90°F / 32°C).
Check 'use-by' or 'sell-by' dates and consume or freeze before these dates for best quality and safety.
Avoid cross-contamination by keeping milk containers clean and sealed.
