Deli meats should not be stored at room temperature due to rapid bacterial growth.
Refrigerator

Store opened packages of deli meat in the coldest part of the refrigerator (40°F or below). Keep tightly wrapped.
Freezer
1-2 months
For best quality, freeze deli meat in its original unopened package or rewrap tightly in freezer paper, foil, or a freezer bag. While safe indefinitely, quality may decline after 1-2 months.
Signs of Spoilage
- Sour or off odor
- Slimy or sticky texture
- Discoloration (e.g., greenish or grayish tint)
- Presence of mold
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Always refrigerate deli meat promptly. If left out for too long, discard it even if it looks and smells fine, as harmful bacteria may not be detectable by sight or smell.
Safe Handling
Keep deli meat refrigerated at 40°F (4°C) or below.
Wash hands thoroughly with soap and water before and after handling deli meat.
Avoid cross-contamination by using separate cutting boards and utensils for deli meat and other foods, especially raw meats.
Do not leave deli meat at room temperature for more than 2 hours (1 hour if the temperature is above 90°F/32°C).
