Signs of Spoilage

  • For dry bulgur: presence of mold, off-odors, or signs of insect infestation.
  • For cooked bulgur: sour or off-odors, slimy texture, or visible mold.

Room Temperature Safety

Cooked bulgur should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), it should not be left out for more than 1 hour.

The 'Danger Zone' for food is between 40°F (4°C) and 140°F (60°C), where bacteria can multiply rapidly.

Promptly refrigerate or freeze cooked bulgur to minimize time spent in the danger zone. Dry bulgur is shelf-stable at room temperature.
