Bulgur Wheat (Brown)Shelf Life, Storage, and Spoilage Guide
Pantry
1 year
Store dry bulgur wheat in an airtight container in a cool, dry, dark place, away from direct sunlight and heat. Keep away from moisture to prevent spoilage and insect infestation.
Refrigerator
Not applicable for dry form; 3-4 days for cooked bulgur.
Dry bulgur wheat is not typically stored in the refrigerator. Cooked bulgur should be stored in a shallow, airtight container to cool quickly and placed in the refrigerator within 2 hours.
Freezer
1 year or indefinitely for dry form; 3-4 months for cooked bulgur.
For dry bulgur, store in a heavy-duty freezer bag or airtight container to prevent freezer burn and moisture absorption. For cooked bulgur, cool completely before freezing in airtight containers or freezer bags.
Signs of Spoilage
- Mold growth (for dry or cooked)
- Off-odor (sour, musty, or unpleasant smell)
- Discoloration
- Slimy or sticky texture (for cooked bulgur)
- Presence of insects or larvae (for dry bulgur)
Room Temperature Safety
40°F–140°F (for cooked bulgur).
Cooked bulgur should not be left at room temperature for more than 2 hours. Discard if left out longer than the recommended time. Dry bulgur is stable at room temperature when stored properly.

Cook bulgur wheat to a safe internal temperature and desired consistency.

Refrigerate cooked bulgur wheat promptly within 2 hours after cooking. If the ambient temperature is above 90°F (32°C), refrigerate within 1 hour.
Reheat cooked bulgur wheat to an internal temperature of 165°F (74°C).
