Fresh mushrooms should be refrigerated immediately after purchase to maintain quality and safety. Pantry storage will lead to rapid spoilage.

Refrigerator

5-7 days

Store unwashed fresh mushrooms in their original packaging or a paper bag in the refrigerator. Avoid storing in airtight containers, which can trap moisture and accelerate spoilage. Do not wash until just before use.

Freezer

10-12 months

For best quality, clean and slice mushrooms, then sauté or steam them until cooked through before freezing. Cool completely, then pack in airtight freezer bags or containers, removing as much air as possible.

Signs of Spoilage

  • Slimy or sticky texture
  • Dark spots or discoloration (beyond natural browning)
  • Sour or ammonia-like odor
  • Visible mold growth

Room Temperature Safety

2-hour rule (1 hour if ambient temperature is above 90°F/32°C)

40°F–140°F (4°C–60°C)

Perishable foods, including fresh mushrooms, should not be left at room temperature for more than 2 hours. If the temperature is above 90°F (32°C), discard after 1 hour.
