Sliced calamansi should not be stored at room temperature due to rapid spoilage and bacterial growth. Adhere strictly to the 2-hour rule.
Refrigerator
3-4 days
Store sliced calamansi in an airtight container or sealed plastic bag to prevent drying out and absorption of odors. Place in the crisper drawer.
Freezer
8-12 months (for best quality, safe indefinitely at 0°F)
Spread slices in a single layer on a baking sheet and freeze until solid. Transfer to a freezer-safe bag or airtight container, removing as much air as possible. Can be used directly in drinks or recipes.
Signs of Spoilage
- Mold growth (fuzzy spots, white or discolored)
- Soft or mushy texture
- Off-odor (sour, fermented, or unpleasant smell)
- Discoloration (darkening or unusual spots)
- Slimy appearance
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C). Foods in this temperature range should be discarded if left out too long.
Always refrigerate sliced calamansi promptly. Never leave it out on the counter for extended periods. If it has been in the danger zone for too long, it is safest to discard it.
Safe Handling
Wash whole calamansi thoroughly under running water before slicing.
Use clean cutting boards, utensils, and hands to prevent cross-contamination.
Refrigerate sliced calamansi promptly within 2 hours of preparation.
Discard any sliced calamansi left at room temperature for more than 2 hours (or 1 hour if above 90°F/32°C).
