Do not store Campechana at room temperature. It is a highly perishable seafood dish and must be kept refrigerated.
Refrigerator
3-4 days
Store Campechana in a shallow, airtight container in the coldest part of the refrigerator at 40°F (4°C) or below. Consume within 3-4 days.
Freezer
2-3 months
For best quality, freeze Campechana in an airtight, freezer-safe container. Thaw in the refrigerator before serving. Note that the texture of the seafood and sauce may change upon thawing.
Signs of Spoilage
- Sour or off-odor (fishy smell)
- Slimy or sticky texture
- Discoloration
- Presence of mold
Room Temperature Safety
40°F–140°F (4°C–60°C)
Perishable foods like Campechana should not be left at room temperature for more than 2 hours. If the temperature is above 90°F (32°C), it should not be left out for more than 1 hour.
Safe Handling
Keep Campechana refrigerated at or below 40°F (4°C) until ready to serve.
Do not leave Campechana at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), discard after 1 hour.
Prevent cross-contamination by using separate cutting boards and utensils for raw ingredients (if preparing from scratch) and ready-to-eat foods.
If preparing at home, ensure all seafood components are cooked to their appropriate internal temperatures before chilling and mixing.
