Store unopened cans in a cool, dry place away from direct sunlight and heat. Once opened, transfer unused portion to an airtight container.
Refrigerator
3-5 days (opened)
After opening, immediately transfer any unused evaporated milk to a clean, airtight container and refrigerate promptly at 40°F (4°C) or below.
Freezer
3 months for best quality, safe indefinitely (opened)
While safe indefinitely, freezing evaporated milk may cause changes in texture (separation or graininess) upon thawing. For best quality, freeze in an airtight, freezer-safe container, leaving headspace as liquids expand when frozen. Thaw in the refrigerator.
Signs of Spoilage
- Sour or off odor
- Mold growth
- Discoloration
- Unusual texture (e.g., curdling, sliminess)
- Bulging, leaking, or rusted cans (for unopened product)
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Opened evaporated milk should be refrigerated promptly to prevent bacterial growth. Discard any opened evaporated milk left in the danger zone for longer than the recommended time.
Safe Handling
Always check the can for damage (bulging, leaking, rust) before opening. Discard if damaged.
