Refrigerator

1-2 weeks

Store unwashed, whole capsicums in a plastic bag or the crisper drawer of your refrigerator. Store cut capsicums in an airtight container or sealed bag.

Freezer

8-12 months

Wash, core, seed, and slice or dice capsicums. Blanching is optional but helps retain quality. Freeze in a single layer on a baking sheet until solid, then transfer to freezer bags or airtight containers.

Signs of Spoilage

  • Soft spots or mushy texture
  • Wrinkled or shriveled skin
  • Mold growth (fuzzy white, green, or black spots)
  • Slimy residue
  • Off-odor

Room Temperature Safety

The 2-hour rule applies: Do not leave perishable foods, including cut capsicum, at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), the limit is 1 hour.

The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).

Whole, uncut capsicums can be left at room temperature for 1-2 days for optimal quality, but refrigeration is recommended for longer storage. Cut capsicums must be refrigerated within 2 hours.
