Store in a cool, dry place away from direct sunlight for up to 1-2 days if refrigeration is not immediately available. Quality will decline rapidly.

Refrigerator

1 to 2 weeks (whole); 3 to 4 days (sliced)

Store unwashed whole capsicums in a plastic bag or crisper drawer. Store sliced capsicums in an airtight container.

Freezer

8 to 12 months

Wash, core, and slice or dice capsicums. Blanching is optional but helps retain color and texture. Pack into freezer-safe bags or containers, removing as much air as possible.

Signs of Spoilage

  • Soft spots or mushy texture
  • Wrinkled or shriveled skin
  • Mold growth (fuzzy white, green, or black spots)
  • Slimy or sticky surface
  • Off-odor

Room Temperature Safety

Perishable foods should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), the limit is 1 hour.

The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).

Capsicums left at room temperature for extended periods, especially if cut, can quickly lose quality and become unsafe due to bacterial growth. Refrigerate promptly.
