Pantry

1-2 days

Store in a cool, dark, dry place away from direct sunlight. For optimal quality and safety, refrigeration is recommended.

Refrigerator

1-2 weeks

Store unwashed in a plastic bag or paper towel in the crisper drawer of the refrigerator.

Freezer

10-12 months

Wash, thoroughly dry, remove stems and seeds. Peppers can be frozen whole, halved, or chopped. Freeze in a single layer on a baking sheet until solid, then transfer to airtight freezer bags or containers.

Signs of Spoilage

  • Soft spots or mushy texture
  • Mold growth (fuzzy white, green, or black spots)
  • Discoloration (darkening or dullness)
  • Slimy or sticky surface
  • Off-odor

Room Temperature Safety

The 2-hour rule applies: Perishable foods should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), food should not be left out for more than 1 hour.

40°F–140°F (4°C–60°C)

While fresh peppers are less prone to rapid bacterial growth than high-protein foods, their quality (firmness, color, flavor) will degrade quickly at room temperature. For best quality and to extend shelf life, refrigerate promptly.

Safe Handling

1

Wear gloves when handling Carolina Reaper peppers to prevent skin irritation from capsaicin.

2

Avoid touching eyes, nose, or other sensitive areas of the body after handling peppers.

3

Wash hands thoroughly with soap and water after handling peppers, even if gloves were worn.

4

Use separate cutting boards and utensils for peppers to prevent cross-contamination of capsaicin to other foods.

5

Do not ingest large quantities due to extreme heat.
