While whole carrots can last a few days in a cool, dark, well-ventilated pantry, refrigeration is strongly recommended for optimal freshness and to prevent spoilage.

Refrigerator

2-3 weeks

Store unwashed whole carrots in a plastic bag or container in the crisper drawer. If carrots are cut, they should be stored in an airtight container submerged in water and refrigerated for 2-3 days, changing the water daily.

Freezer

10-12 months

Blanch carrots before freezing for best quality. Cut into desired pieces, blanch in boiling water for 2-5 minutes depending on size, then cool rapidly in ice water, drain, and pack into airtight freezer bags or containers.

  • Mold growth

  • Discoloration (e.g., dark spots)

Perishable foods, including cut carrots, should not be left at room temperature for more than 2 hours (or 1 hour if the temperature is above 90°F/32°C). Whole, unpeeled carrots are less susceptible but still benefit from refrigeration.
