Carrots prefer cool, moist environments. Storing at room temperature for more than 1-2 days can lead to wilting and spoilage. If stored briefly, keep in a cool, dark place.
Refrigerator
1-2 weeks
Store unwashed carrots in a plastic bag or wrapped in a damp paper towel in the crisper drawer of the refrigerator. Remove green tops before storing to prevent moisture loss.
Freezer
8-12 months
For best quality, blanch carrots before freezing. Wash, peel, and slice or dice. Blanch in boiling water for 2-5 minutes depending on size, then cool quickly in ice water. Drain thoroughly, pack into airtight freezer bags or containers, and freeze.
Signs of Spoilage
- Soft or limp texture (wilting)
- Slimy film on the surface
- Mold growth (fuzzy white, green, or black spots)
- Off-odor (sour or unpleasant smell)
- Discoloration (dark spots or unusual color changes)
Room Temperature Safety
The 'Danger Zone' for food is between 40°F (4°C) and 140°F (60°C), where bacteria can multiply rapidly.
Whole, uncut carrots can be left at room temperature for a very short period (1-2 days) before quality deteriorates. Cut or cooked carrots should be refrigerated promptly to prevent bacterial growth.
Safe Handling
Wash carrots thoroughly under running water before peeling or cutting, even if you plan to peel them.
Prevent cross-contamination by using separate cutting boards and utensils for produce and raw meat, poultry, or seafood.
Discard any carrots that show signs of spoilage.
