Cakes with cream cheese frosting should not be left at room temperature for more than 2 hours due to the perishable nature of the frosting. If the ambient temperature is above 90°F (32°C), the limit is 1 hour.
Refrigerator
3-4 days
Store carrot cake with cream cheese frosting tightly covered in the refrigerator to prevent drying out and absorption of odors. Place in an airtight container or wrap well with plastic wrap.
Freezer
3-4 months
To freeze, wrap individual slices or the whole cake (if unfrosted or with a sturdy frosting) tightly in plastic wrap, then in aluminum foil. Place in a heavy-duty freezer bag or airtight container. Thaw in the refrigerator.
Signs of Spoilage
- Visible mold growth on the cake or frosting.
- Sour or off-odor, especially from the cream cheese frosting.
- Discoloration or darkening of the cake or frosting.
- Slimy or sticky texture on the surface of the cake or frosting.
- Unpleasant taste.

The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
