Celery requires refrigeration to maintain crispness and extend shelf life. Pantry storage will cause it to wilt quickly.

Refrigerator

1-2 weeks

Store fresh celery in a plastic bag or wrapped tightly in aluminum foil in the crisper drawer of the refrigerator. Do not wash until ready to use.

Freezer

10-12 months (blanched)

For best quality, blanch celery before freezing. Wash, trim, and cut celery into desired pieces. Blanch in boiling water for 3 minutes, then cool quickly in ice water. Drain thoroughly, pack into airtight freezer bags or containers.

Signs of Spoilage

  • Limp or rubbery texture
  • Yellowing or browning discoloration
  • Soft or mushy spots
  • Mold growth
  • Off-odor

Room Temperature Safety

The 2-hour rule applies: Do not leave perishable foods, including cut celery, at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), the limit is 1 hour.

The 'Danger Zone' for food is between 40°F (4°C) and 140°F (60°C), where bacteria can multiply rapidly.

Whole, uncut celery can be left at room temperature for a short period, but for optimal quality and safety, it should be refrigerated. Cut celery should be refrigerated promptly.
