For optimal safety and quality, refrigeration is recommended for fresh celery root. Extended pantry storage is not ideal.
Refrigerator
2-3 weeks
Store unwashed celery root in a plastic bag in the crisper drawer of the refrigerator.
Freezer
10-12 months (blanched)
Celery root should be blanched before freezing for best quality. Peel, cut into desired pieces, blanch in boiling water for 2-3 minutes, then cool quickly in ice water, drain, and pack into airtight freezer bags or containers.
Signs of Spoilage
- Soft or mushy spots
- Mold growth (fuzzy white, green, or black spots)
- Strong, unpleasant, or sour odor
- Significant discoloration or darkening of the root
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
To maintain safety and quality, fresh celery root should be refrigerated promptly after purchase and preparation. Do not leave cut or cooked celery root at room temperature for extended periods.
Safe Handling
Wash celery root thoroughly under running water before peeling or cutting.
Peel the tough outer skin before use.
Prevent cross-contamination by using separate cutting boards and utensils for produce and raw meats.
Refrigerate cut celery root promptly in an airtight container.
