For best quality and safety, fresh chanterelle mushrooms should be refrigerated immediately. If stored briefly at room temperature, keep in a cool, dry place and use within 1 day.
Refrigerator
5-7 days
Store unwashed chanterelle mushrooms in a paper bag or loosely covered container in the refrigerator. Avoid airtight containers, which can trap moisture and accelerate spoilage. Do not wash until just before use.
Freezer
10-12 months
For best quality, clean and slice chanterelle mushrooms, then sauté or blanch before freezing. Freeze in a single layer on a baking sheet, then transfer to freezer-safe bags or containers, removing as much air as possible.

Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).

Safe Handling
