Once opened, cheddar cheese should be refrigerated immediately to maintain quality and safety.

Refrigerator

3-4 weeks

Store tightly wrapped in plastic wrap or aluminum foil, or in an airtight container, in the coldest part of the refrigerator.

Freezer

6 months

For best quality, freeze in small portions, tightly wrapped in heavy-duty aluminum foil or freezer wrap, or placed in freezer bags. Thaw in the refrigerator.

Signs of Spoilage

  • Visible mold (especially if it has spread beyond the surface on hard cheese, or any mold on soft cheese)
  • Off-odor (sour, ammonia-like, or yeasty smell)
  • Slimy or sticky texture
  • Significant discoloration

Room Temperature Safety

The 2-hour rule applies: Do not leave perishable foods, including opened cheese, at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), the limit is 1 hour.

The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).

Promptly refrigerate opened cheese to prevent bacterial growth and spoilage. Discard any cheese left in the danger zone for too long.
