Pantry

Unopened, shelf-stable processed cheese products may be stored in the pantry according to package directions. All other types of cheese, especially once opened, require refrigeration.
Refrigerator
1 week to 6 months (varies by type and whether opened)
Store soft cheeses (e.g., Brie, cream cheese, cottage cheese) for 1 week after opening. Store opened hard cheeses (e.g., Cheddar, Swiss) and processed cheeses for 3-4 weeks. Unopened hard cheese can last up to 6 months.
Freezer
3-6 months (for hard, processed, or shredded cheese); Not recommended for soft cheese
Hard and processed cheeses can be frozen for up to 6 months, though texture may become crumbly. Shredded cheese can be frozen for 3 months. Soft cheeses are not recommended for freezing due to significant texture changes.
Signs of Spoilage
- Mold (especially on soft cheese, or mold that spreads beyond the surface on hard cheese)
- Off-odor (sour, ammonia-like)
- Slimy or sticky texture
- Discoloration
Room Temperature Safety
40°F–140°F (4°C–60°C)
Perishable foods, including cheese, should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), cheese should not be left out for more than 1 hour.
Safe Handling
Always keep cheese refrigerated at 40°F (4°C) or below.
Wrap cheese tightly in plastic wrap or foil, or place in an airtight container to prevent drying out and absorption of odors.
For hard cheeses with surface mold, cut off at least 1 inch around and below the mold spot. Do not consume moldy soft cheeses.
Avoid cross-contamination by using separate cutting boards and utensils for cheese and raw meats.
