Unopened, commercially sterile cheese sauce can be stored in the pantry until its 'Best By' date. Once opened or if homemade, it must be refrigerated promptly.
Refrigerator
3-4 days
Store in shallow, airtight containers. Refrigerate within 2 hours of cooking or serving. Do not overfill containers to allow for proper cooling.
Freezer
2-3 months
Freeze in airtight, freezer-safe containers or heavy-duty freezer bags. Leave headspace for expansion. Thaw in the refrigerator and reheat thoroughly.
Signs of Spoilage
- Sour or off-odor
- Visible mold growth
- Discoloration (e.g., darker or unusual spots)
- Slimy or sticky texture
- Separation of ingredients with an unpleasant appearance
Room Temperature Safety
The 'Danger Zone' for food is between 40°F (4°C) and 140°F (60°C), where bacteria can multiply rapidly.
Promptly refrigerate or freeze cheese sauce to prevent bacterial growth. Discard any cheese sauce left in the danger zone for too long.
Safe Handling
Refrigerate cheese sauce within 2 hours of preparation or opening. If the temperature is above 90°F (32°C), refrigerate within 1 hour.
Reheat all leftovers, including cheese sauce, to an internal temperature of 165°F (74°C).
Do not leave cheese sauce at room temperature for more than 2 hours.
Avoid cross-contamination by using clean utensils and containers.
