Raw chicken should never be stored at room temperature due to rapid bacterial growth.
Refrigerator

Store raw chicken fillets in a clean, covered container on the lowest shelf of the refrigerator to prevent juices from dripping onto other foods. Maintain refrigerator temperature at or below 40°F (4°C).
Freezer
9 months
For best quality, freeze raw chicken fillets in airtight packaging (heavy-duty freezer bags, aluminum foil, or freezer wrap) at 0°F (-18°C) or below. Label with the date.
Signs of Spoilage
- Off-odor, such as a sour or ammonia-like smell
- Slimy or sticky texture
- Discoloration (e.g., green, gray, or dull appearance)
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Always refrigerate or freeze raw chicken promptly. Discard any raw chicken left in the danger zone for longer than the recommended time limits.
Safe Handling
Cook all raw poultry, including chicken fillets, to a safe minimum internal temperature of 165°F (74°C) as measured with a food thermometer.
Wash hands thoroughly with soap and water for at least 20 seconds before and after handling raw chicken.
Use separate cutting boards, plates, and utensils for raw chicken and ready-to-eat foods to prevent cross-contamination.
Never place cooked food on a plate that previously held raw chicken unless the plate has been thoroughly washed with hot, soapy water.
