Store in a cool, dark, well-ventilated area away from direct sunlight. Refrigeration is recommended for longer storage.

Refrigerator

1-2 weeks

Store unwashed in a plastic bag or wrapped in a paper towel in the crisper drawer of the refrigerator. Wash just before use.

Freezer

8-12 months

Wash chiles, pat dry. Remove stems and seeds (optional). Freeze whole or chopped in a single layer on a baking sheet, then transfer to airtight freezer bags or containers.

Signs of Spoilage

  • Soft spots or mushy texture
  • Sliminess
  • Mold growth (fuzzy white, green, or black spots)
  • Discoloration (darkening or unusual spots)
  • Off-odor or sour smell

Room Temperature Safety

2-hour rule (1 hour if ambient temperature is above 90°F/32°C)

40°F–140°F (4°C–60°C)

Do not leave fresh chiles at room temperature for more than 2 hours. If temperatures are above 90°F (32°C), discard after 1 hour.
