Pantry
1-2 days
Store in a cool, dark, well-ventilated area away from direct sunlight. Refrigeration is recommended for longer storage.
Refrigerator
1-2 weeks
Store unwashed in a plastic bag or wrapped in a paper towel in the crisper drawer of the refrigerator. Wash just before use.
Freezer
8-12 months
Wash chiles, pat dry. Remove stems and seeds (optional). Freeze whole or chopped in a single layer on a baking sheet, then transfer to airtight freezer bags or containers.
Signs of Spoilage
- Soft spots or mushy texture
- Sliminess
- Mold growth (fuzzy white, green, or black spots)
- Discoloration (darkening or unusual spots)
- Off-odor or sour smell
Room Temperature Safety
40°F–140°F (4°C–60°C)
Do not leave fresh chiles at room temperature for more than 2 hours. If temperatures are above 90°F (32°C), discard after 1 hour.
Safe Handling
Wash hands thoroughly with soap and water before and after handling fresh chiles.
Wear gloves when handling hot chiles to prevent skin irritation and avoid touching eyes or face.
Wash chiles under running water just before use.
Avoid cross-contamination by using separate cutting boards and utensils for chiles and other foods, especially ready-to-eat items.
