For optimal freshness and safety, fresh chili peppers should be refrigerated. Extended storage at room temperature is not recommended.
Refrigerator
1-2 weeks
Store unwashed fresh chili peppers in a plastic bag or paper towel in the crisper drawer of the refrigerator. Wash only before use.
Freezer
6-8 months
Wash and thoroughly dry chili peppers. Remove stems. They can be frozen whole or chopped. Spread in a single layer on a baking sheet to freeze, then transfer to freezer bags or airtight containers.
Signs of Spoilage
- Soft spots or mushy texture
- Wrinkled or shriveled skin
- Mold growth (fuzzy white, green, or black spots)
- Slimy residue
- Off-odor
Room Temperature Safety
40°F–140°F
Fresh chili peppers should not be left at room temperature (between 40°F and 140°F) for more than 2 hours. If the ambient temperature is above 90°F (32°C), they should not be left out for more than 1 hour.
Safe Handling
Wash hands thoroughly with soap and water after handling chili peppers, especially hot varieties, to prevent irritation.
Avoid touching eyes, nose, or mouth after handling chili peppers.
Consider wearing gloves when handling very hot chili peppers.
Wash fresh produce under running water before eating, cutting, or cooking.
