Unopened chilli mayo can be stored in a cool, dark pantry until the 'Best By' date. Once opened, it must be refrigerated immediately and is unsafe for pantry storage.

Freezer

Freezing is not recommended as it causes the emulsion to break, resulting in an undesirable texture and separation.
Signs of Spoilage
- Off-odor (sour, rancid)
- Visible mold growth
- Significant discoloration
- Separation of ingredients or watery texture
- Unusual taste
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Refrigerate chilli mayo promptly after use. Discard any chilli mayo that has been left in the danger zone for longer than the recommended time limits.
Safe Handling
Always refrigerate promptly after opening.
Do not leave at room temperature for more than 2 hours (1 hour if ambient temperature is above 90°F/32°C).
Use clean utensils to scoop out chilli mayo to prevent cross-contamination.
Discard if left in the danger zone (40°F–140°F) for too long.
