Unopened commercial chilly oil sauce can be stored in a cool, dark place until its 'best by' date. Once opened, pantry storage is not recommended due to the risk of bacterial growth, especially if it contains low-acid ingredients like garlic or herbs, which can pose a botulism risk.
Refrigerator
1-2 months
Store opened chilly oil sauce tightly sealed in the refrigerator. The oil may solidify or become cloudy at cold temperatures, but this does not affect its safety or quality; it will return to liquid at room temperature.
Freezer
Not recommended for quality, but safe indefinitely
While safe indefinitely from a food safety perspective, freezing may alter the texture and flavor of oil-based sauces, causing separation. If freezing, store in an airtight, freezer-safe container, leaving headspace for expansion.
Signs of Spoilage
- Off-odor (rancid or sour smell)
- Mold growth
- Unusual discoloration
- Fuzzy appearance
- Separation with unusual liquid or solid layers not typical of the product
- Bubbling or gas production
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Chilly oil sauce, especially once opened, should not be left at room temperature for extended periods. Promptly refrigerate after use to maintain safety and quality.
Safe Handling
Always use clean utensils to scoop out the sauce to prevent cross-contamination.
If homemade and containing fresh garlic or herbs, ensure proper acidification or refrigerate immediately and consume within 7 days to prevent botulism.
Discard chilly oil sauce if it has been left at room temperature for more than 2 hours (or 1 hour if above 90°F/32°C).
Always check for signs of spoilage before consumption.
