Chimichurri, being a fresh herb-based sauce, is highly perishable and should not be stored at room temperature for extended periods. Follow the 2-hour rule.
Refrigerator
3-4 days
Store chimichurri in a tightly sealed, airtight container in the refrigerator. To help prevent oxidation and maintain freshness, you may cover the surface with a thin layer of olive oil, but this does not extend the safety duration beyond 3-4 days.
Freezer
3-4 months
For best quality, freeze chimichurri in ice cube trays or small freezer-safe containers. Once frozen, transfer cubes to a freezer bag. Thaw in the refrigerator before use.
Signs of Spoilage
- Off-odor (sour, yeasty, or unpleasant smell)
- Visible mold growth
- Discoloration (darkening or unusual color changes)
- Slimy or unusual texture
Room Temperature Safety
40°F–140°F (4°C–60°C)
Perishable foods like chimichurri should not be left at room temperature within the danger zone for more than 2 hours. Discard any chimichurri left out longer than this timeframe.
Safe Handling
Always use clean utensils and containers when preparing and storing chimichurri to prevent cross-contamination.
Wash all fresh herbs and garlic thoroughly under running water before use.
Keep chimichurri refrigerated at 40°F (4°C) or below.
Do not leave chimichurri at room temperature for more than 2 hours (1 hour if the ambient temperature is above 90°F/32°C).
