Due to its ingredients (eggs, dairy), chocolate fondant should not be left at room temperature for more than 2 hours. Promptly refrigerate any leftovers.
Refrigerator
3-4 days
Store in an airtight container to maintain freshness and prevent absorption of odors. Ensure it is fully cooled before refrigerating.
Freezer
2-3 months
Wrap individual portions tightly in plastic wrap, then in aluminum foil, or place in a heavy-duty freezer bag to prevent freezer burn. Thaw in the refrigerator.
Signs of Spoilage

- Unusual discoloration
- Slimy or sticky texture
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
To ensure safety, promptly refrigerate or discard chocolate fondant if it has been left out within the danger zone for too long.
Safe Handling
Do not leave chocolate fondant at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), discard after 1 hour.
Refrigerate promptly after cooling to prevent bacterial growth.
When reheating, ensure it reaches an internal temperature of 165°F (74°C) for safety, although it is typically served warm with a molten center.
